Cheese Potato and Smoked Sausage Casserole

recipe from Food.com


3 cups potatoes, peeled, boiled and cut into cubes
when cool approx 1 pound
4 Tbsp butter
4 Tbsp flour
2 cups milk
1/2 tsp salt
1/4 tsp pepper
1/2 pound Velveeta cheese, diced
1/2 cup sharp cheddar cheese, shredded
1 pound skinless smoked sausage
1/8 tsp paprika

Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2 inch "half moon" cuts.
Cook in frying pan about 15 minutes, turning frequently to slightly brown.
Meanwhile, put cooked and diced potatoes in 2 quart casserole.
Add cooked meat and give it a gentle toss
Mix all remaining ingredients (except for shredded cheddar cheese and the paprika) in a saucepan over medium heat until warm, melted and smooth, (use a whisk and stir constantly)
Pour white/cheese sauce over potatoes and meat. Sprinkle shredded cheddar cheese on top, and then sprinkle with paprika evenly over the top.
Bake in preheated oven at 350 for 35-45 minutes (watch until golden brown on top)



Chocolate Cake, Egg-free

chocolate cake mix
15 oz can of Pumpkin pie filling
(can also toss in chocolate chips)

mix them together and bake accordingly
original recipe is for large muffins, but we made a birthday cake!



Hormel Chili Dip

can of Hormel Chili 
block of cream cheese
toss it in a bowl and heat in the microwave!
Serve with tortilla chips

Yup, easy as that!
It's not impressive or healthy, but it's good! Fancy it up and throw in some taco seasoning or shredded cheese.

Chicken Nuggets

recipe from Kraft

1 lb boneless skinless chicken breasts, cut into 1 1/2 - 2 inche pieces
(we used 3 good sized chicken breasts)
1 packet, Shake n' Bake chicken coating mix

coat chicken with coating mix as directed on package
(only place 3-4 nuggets in coating mix at a time)
place in shallow, foil-lined pan
bake at 400 for 15-20 minutes, until until cooked through

Chicken Enchilada Puffs

recipe from Tidy Mom

1 package jumbo cresent rolls ( I used regular)
3 oz cream cheese
1/2 cup Mexican shredded cheese
3/4 cup cooked chicken, diced or shredded
1/3 cup enchilada sauce or taco sauce
2 tsp enchilada or taco seasoning mix
1/4 cup Mexican shredded cheese for topping

preheat oven to 375 degrees and line cookie sheet with foil and spray with non-stick cooking spray
place cream cheese and 1/2 cup Mexican cheese in small bowl and microwave for 30 seconds, to soften
Add seasoning mix, sauce and chicken to cheese mixture and stir until combined
unroll cresent rolls
Scoop 1 heaping tablespoon of mixture onto each cresent roll
Pull outer corners of cresent roll over the mixture, and then pull long end over, completely enclosing filling.
sprinkle tops of puffs with additional Mexican cheese

Bake 15 minutes or until golden brown
