Chicken what the heck

recipe from Chris

approx. 6 chicken breasts
ham slices
swiss cheese slices
cream of chicken soup
    mixed with 1/4 cup of water
box of stuffing
1 stick of butter

crush stuffing
mix with 1 stick melted butter
place some in bottom of pan
layer chicken
pour soup/water mixture over chicken
layer ham then cheese
top with remaining stuffing mixture

bake covered at 325 for 1 hour
uncover, bake additional 15 minutes

Baked Mostaciolli

recipe from Tricia

1 pound ground beef, cooked
add in 1 jar Prego spaghetti sauce, let simmer

16 oz Mostaciolli, cooked

Combine:
16 oz, large cottage cheese
2 eggs
1/3 cup parmesan cheese
2 Tbsp parsley
salt and pepper to taste
2 cups mozzarella cheese

combine this mixture with the meat and sauce
place in greased 9x13

cover with foil, bake at 350 for 30 minutes

Monkey Bread

recipe from Tricia

combine and bring to a boil:
1 stick butter
1 cup sugar
1 tsp cinnamon

Pillsbury original biscuits, cut into quarters
roll in cinnamon and sugar
place in greased Bundt pan

pour boiling butter mixture over top

place in oven at 350 for 20 minutes
top should be golden brown

recipe from my mom

1 pound hamburg, cooked
1 chopped onion
1 can tomato soup
1 can mixed vegetables
1 can spaghetti
1 can potatoes
1 can corn

combine all and heat in crock pot

Baked Beans

recipe from Mom

64 oz Bush's Baked Beans
(drain all but 1 can)
1 pound hamburg, fried
1/2 cup onion, fried with hamburg
1 pound bacon, cooked and crumbled
1 cup ketchup
1+ cup brown sugar
2 tsp mustard
4 tsp vinegar

heat in crock pot

Sweet & Salty Bark

recipe from Kraft Food & Family


6 oz (1 1/2 pkg) Bakers Semi-Sweet Chocolate
6 oz  (1 1/2) pkg Bakers White Chocolate
1 cup chopped pretzels
1/3 cup dry roasted peanuts, chopped

melt chocolate in microwave
stir after 1 minute
continue in microwave for 15-30 seconds
stir until melted completely

add in pretzels and peanuts, mix well

spread onto a wax paper-covered baking sheet

refrigerate 1 hour or until firm, then break into pieces

Buffalo Chicken Dip

recipe from Kim

2 cans premium chicken (12 oz cans)
1 block cream cheese
1/2 ranch dressing
1/2 cup Franks Red Hot sauce
1/2 cup Mozzarella cheese

soften cream cheese
shred chicken
mix all ingredients together
heat in oven or crock pot until warm

Hashbrown Casserole - DeZwaans

recipe from Chris

2 lbs frozen hashbrowns, Southern Style
1 cup sour cream
1 can cream of chicken
8 oz shredded chedder cheese
1/2 cup melted butter

mix together and place in 9x13 pan

now mix
1/4 cup melted butter
2 cups crushed corn flakes
pour over top potato mixture

cover and bake at 350 for a minimum of 1 hour
uncover, and bake additional 10 minutes, or a bit longer for added crunch!)

Meat Loaf

recipe from Aunt Judy

2 lbs ground beef
3/4 cup milk
1 1/2 cups soft bread crumbs
1/8 tsp pepper
1 small onion (optional)
2 beaten eggs

topping:
1/4 cup ketchup
3 Tbsp brown sugar
2 Tbsp mustard

mix all ingredients together, except topping
place in loaf pan
mix together topping ingredients, and pour over loaf

bake at 300 for 1 1/2 - 1 3/4 hours
pour out grease before serving

Swiss Steak

recipe from Aunt Barb

cube steak, as many as you would like (4-6)
flour
1 onion cut up
1 small box mushrooms
(washed and sliced)
2 cans cream of mushroom soup
2 cans cream of chicken soup
1 can French onion soup
1/2 soup can filled with water

1. press flour into cube steaks, brown meat in fry pan
2. mix together onion, mushrooms, and soups
3. layer in crock pot, soup mixture, steaks, mixture, steak, mixture
4. cook on low for 10-12 hours

You also have the option to bake this meal...
bake uncovered at 350 for 2 1/2 hours

Black Bean Salsa

Recipe from Sarah

1 can diced tomatoes, drained
2 cans corn, drained
2 cans black beans, drained
2 avocados, diced
Onion, diced
Cilantro, chopped
Red wine vinegar
Lime juice

Mix together and enjoy!!

Chex Mix

Recipe from Kerri


2 cans mixed nuts , approx 10oz each
1 box Rice Chex
1 bag pretzels

Melt 1 stick butter and 1 stick margarine

Add in...
1/2 cup vegetable oil
1 Tbsp Worcestershire sauce
1 tsp celery salt
1 tsp garlic salt
1 tsp onion salt

Mix all together
Spread out on 2 large baking sheets
Bake for 1 hour at 250 degrees
Stir every 15 minutes

Chicken n' Rice

Recipe from Eric's mom

1 cup+ white rice (not instant rice)
1 can chicken broth
Boneless skinless chicken breasts
1 can cream of mushroom
1 can cream of chicken
1 can French onion soup

In a buttered 9x13 pan layer...
Rice and chicken broth
Chicken, cut to your preference
(I cut each into 3 or 4 pieces)
Mix all the soups together and pour over

Bake at 350
Covered for 1 hour then
Uncovered for 45 minutes

One Dish Meal

Recipe from Overisel Christian Reformed Church cookbook


Layer the following in 9x13 dish

1 lb Hamburg, browned
1 layer carrots, sliced thin
1 layer onion, chopped
1 layer potatoes, sliced thin
1layer corn
Mix 1 can cream of chicken and 1/2 cup milk
Pour over casserole

Cover, bake at 350 for 1 hour
Bake additional 30 minutes uncovered

Cookie Cake

3/4 cup butter, softened
1/2 cup brown sugar
1 egg ( or 1/3 cup applesauce)
1 tsp vanilla extract
1 cup + 1 Tbsp flour
1/4 tsp baking soda
1 cup M&M's

preheat oven to 325 degrees
cream butter and sugar
add in egg (or applesauce) and vanilla and blend
add in flour and baking soda, mix until well blended
fold in M&M's
place in greased pie pan
bake 25-30 minutes



Parmesan Crisps

recipe from Food & Family

3/4 cup shredded Parmesan cheese
1/4 cup grated Parmesan cheese
1/2 tsp coarsely ground black pepper
substitute cayenne pepper or smoked paprika for the pepper

heat oven to 350
combine cheeses
spoon into 14 mounds, 2 inches apart on a baking sheet
using about 1 Tbsp. cheese mixture for each
flatten mounds slightly
Sprinkle with pepper

Bake 6 minutes or until golden brown, rotating baking sheet after 3 minutes

immediately transfer to wire racks, cool completely

store in airtight container at room temperature for up to two days.

I tried this recipe simply because I had extra shredded Parmesan cheese to use up. I would maybe serve it as a side with a pasta dish, appetizer, or on a salad, but everyone enjoyed them as a snack!




Chocolate Chip Dip

recipe from Taste of Home


8 oz package cream cheese, softened
1/2 cup butter, softened
3/4 cup powdered sugar
2 Tbsp brown sugar
1 tsp vanilla
1 cup mini chocolate chips
graham cracker sticks, honey scooby doo crackers, or animal crackers

In a small bowl beat cream cheese and butter until light and fluffy.
Add sugars and vanilla, beat until smooth
Stir in chocolate chips
Chill in fridge
Serve with graham crackers

Greek Guacamole Salsa

4 ripe avacados
3 Roma tomatoes (seeded)
Red onion (1/4 to 1/2 cup)
Red, orange, yellow pepper (1 of each)
6-10 oz feta cheese
Fresh cilantro to taste (just over 1/4 cup)
1 tsp cumin
1 lime (juice of)
Zesty Italian dressing
(Less than 1/4 cup, just enough to help it stick together)

Dice up tomatoes, onion, peppers, and cilantro
Put together all ingredients except avacado and dressing
Mix in large bowl
Cut up avacados and stir in
Pour in Italian dressing, a little at a time
(Too much and it gets mushy)

Serve with taco chips!
Amazing, enjoy!

Peanut Butter Pie

recipe from Eric's mom


8 oz cream cheese, softened and cut into cubes
1 1/2 cups powdered sugar
1 cup creamy peanut butter
1 cup chilled whipping cream
1/2 tsp vanilla extract
*1 large tub cool whip, save half for topping
1 ready made chocolate cookie crumb pie crust
Peanut butter cups, cut into bite size pieces

combine all in ingredients, except crust.
blend with mixer until smooth
(electric mixer on medium)

fill crust with mixture
place pie in freezer for minimum of 2 hours

** the tub of cool whip is not part of the original recipe Eric's mom found in a magazine. So it makes for a greater amount of pie filling than what will fit in the crust. You could crush up oreos and make individual servings in addition to the pie.
I bought the larger tub of cool whip, using half in the pie filling and saving some of it to top the pie with
then top that cool whip with peanut butter cup pieces

Delish!


Filled Meatballs

recipe from my mom


1 lb hamburg
1 cup cracker crumbs
1/2 cup milk
2 tsp minced onion
1 tsp garlic salt
1/8 tsp pepper
8 oz mozzarella cheese, cut into 12 or more cubes
Chef-Boy-R-Dee Pizza sauce with cheese

Mix together first 6 ingredients
from into balls and press cheese cube into center
roll meatballs in flour
brown meatballs in oil
place in baking dish and cover with pizza sauce
bake at 350 for 30 minutes

FYI- using Mozzarella string cheese does not work well!
