Herb Bread

recipe from Jean


1 loaf Italian or French bread
1/2 cup soft margarine
1 tsp. parsley flakes
1/4 tsp. oregano
1/4 tsp. dried dill weed
1/4 tsp. garlic powder


Cut bread into 1 inch slices
Mix together all ingredients and spread on both sides of each slice of bread
place on tinfoil and shape around loaf - boat fashion, leaving top open
sprinkle top liberally with Parmesan cheese and parsley flakes
heat in oven at 400 degrees for 10 minutes

freezes well

I will also use up leftover hot dog or hamburg buns with this mixture

Chicken Chimichangas for Camping

4, 7 in flour tortillas
1 cup chicken, (or more) cut into pieces
1/2 cup onion, chopped
1/2 cup green pepper, chopped
1/4 cup Picante or enchilada sauce, green or red
1/4 tsp ground cumin
salt & pepper to taste
garlic salt to taste
1/2 cup Cheddar cheese, cubed

Cook chicken, onion, green pepper in pan with a bit of oil until onions turn clear
add cumin, salt & pepper, and garlic, cook for a few more minutes
add enchilada sauce
remove from heat, add cheese
spoon mixture into center of shell, fold over edges and form into squares
place chimichangas in pie iron and heat over the camp fire!
can serve over hot refried beans, top with lettuce, tomato, sour cream, salsa, whatever you like.

I make this ahead of time, and wrap them in tinfoil and throw them in the freezer. 
Take out a day ahead of time to thaw.

Idea from Lindsay.... we added Spanish rice to the next batch we made, and it worked great! I made the rice, and then added it to the completed chicken/cheese mixture. It also froze really well!

Pizza Burgers

recipe from Eric's mom


1 pound hamburg, cooked
6 oz tomato paste
1 tsp oregano
pepperoni, cut up
4 hamburger buns
mozzarella cheese

fry up hamburg and drain grease
mix in tomato paste, oregano, and pepperoni
separate hamburg buns and lay flat side up on pan
spoon on hamburg mixture, top with mozzarella cheese
bake 350 degrees for 15-20 minutes, or until cheese is melted

*can add in green pepper, onion, mushrooms, etc

Chicken K-bobs

chicken, cut into large chunks
vegetables of your choice
Italian dressing
k-bob sticks

marinate chicken and vegetables in Italian dressing
push onto sticks
grill until chicken is cooked through

*if you're using wooden sticks, soak them in water before putting them on the grill

Italian Nachos

Italian sausage, cooked
Chicken, cooked and shredded
Taco chips
mozzarella cheese
Alfredo sauce
Jalepenos 

Layer the following on pan...
Taco chips 
sausage and chicken
mozzarella cheese
jalapenos
drizzle with Alfredo sauce

bake at 400 degrees until cheese is melted and just turning golden brown
no dipping sauce is needed

*Tips for Alfredo sauce. Mix in can well, the thick stuff is at the bottom. Because you won't use the whole jar, pour some in a bowl and warm just slightly in the microwave. Drizzle over nachos with a spoon.
*The chicken is optional, but we think it taste the best with both
*Jalapenos are also optional. I don't eat them, but I do like the flavor baked into the nachos
*can also add green pepper, or use that instead of jalapenos

Oreo Pudding

1 box vanilla pudding
1 box chocolate pudding
3 1/2 cups milk
whisk together for 2 minutes
mix in 2 tubs of cool whip
mix in package of Oreo cookies, crumbled

*This one is always a hit with the kids!




Noodle Salad

box of noodles, cooked
mix in Italian dressing
mix in Parmessan cheese
you can also add green pepper

super simple and easy!
