Chicken n' Rice

Recipe from Eric's mom

1 cup+ white rice (not instant rice)
1 can chicken broth
Boneless skinless chicken breasts
1 can cream of mushroom
1 can cream of chicken
1 can French onion soup

In a buttered 9x13 pan layer...
Rice and chicken broth
Chicken, cut to your preference
(I cut each into 3 or 4 pieces)
Mix all the soups together and pour over

Bake at 350
Covered for 1 hour then
Uncovered for 45 minutes

One Dish Meal

Recipe from Overisel Christian Reformed Church cookbook


Layer the following in 9x13 dish

1 lb Hamburg, browned
1 layer carrots, sliced thin
1 layer onion, chopped
1 layer potatoes, sliced thin
1layer corn
Mix 1 can cream of chicken and 1/2 cup milk
Pour over casserole

Cover, bake at 350 for 1 hour
Bake additional 30 minutes uncovered

Cookie Cake

3/4 cup butter, softened
1/2 cup brown sugar
1 egg ( or 1/3 cup applesauce)
1 tsp vanilla extract
1 cup + 1 Tbsp flour
1/4 tsp baking soda
1 cup M&M's

preheat oven to 325 degrees
cream butter and sugar
add in egg (or applesauce) and vanilla and blend
add in flour and baking soda, mix until well blended
fold in M&M's
place in greased pie pan
bake 25-30 minutes



Parmesan Crisps

recipe from Food & Family

3/4 cup shredded Parmesan cheese
1/4 cup grated Parmesan cheese
1/2 tsp coarsely ground black pepper
substitute cayenne pepper or smoked paprika for the pepper

heat oven to 350
combine cheeses
spoon into 14 mounds, 2 inches apart on a baking sheet
using about 1 Tbsp. cheese mixture for each
flatten mounds slightly
Sprinkle with pepper

Bake 6 minutes or until golden brown, rotating baking sheet after 3 minutes

immediately transfer to wire racks, cool completely

store in airtight container at room temperature for up to two days.

I tried this recipe simply because I had extra shredded Parmesan cheese to use up. I would maybe serve it as a side with a pasta dish, appetizer, or on a salad, but everyone enjoyed them as a snack!




Chocolate Chip Dip

recipe from Taste of Home


8 oz package cream cheese, softened
1/2 cup butter, softened
3/4 cup powdered sugar
2 Tbsp brown sugar
1 tsp vanilla
1 cup mini chocolate chips
graham cracker sticks, honey scooby doo crackers, or animal crackers

In a small bowl beat cream cheese and butter until light and fluffy.
Add sugars and vanilla, beat until smooth
Stir in chocolate chips
Chill in fridge
Serve with graham crackers

Greek Guacamole Salsa

4 ripe avacados
3 Roma tomatoes (seeded)
Red onion (1/4 to 1/2 cup)
Red, orange, yellow pepper (1 of each)
6-10 oz feta cheese
Fresh cilantro to taste (just over 1/4 cup)
1 tsp cumin
1 lime (juice of)
Zesty Italian dressing
(Less than 1/4 cup, just enough to help it stick together)

Dice up tomatoes, onion, peppers, and cilantro
Put together all ingredients except avacado and dressing
Mix in large bowl
Cut up avacados and stir in
Pour in Italian dressing, a little at a time
(Too much and it gets mushy)

Serve with taco chips!
Amazing, enjoy!

Peanut Butter Pie

recipe from Eric's mom


8 oz cream cheese, softened and cut into cubes
1 1/2 cups powdered sugar
1 cup creamy peanut butter
1 cup chilled whipping cream
1/2 tsp vanilla extract
*1 large tub cool whip, save half for topping
1 ready made chocolate cookie crumb pie crust
Peanut butter cups, cut into bite size pieces

combine all in ingredients, except crust.
blend with mixer until smooth
(electric mixer on medium)

fill crust with mixture
place pie in freezer for minimum of 2 hours

** the tub of cool whip is not part of the original recipe Eric's mom found in a magazine. So it makes for a greater amount of pie filling than what will fit in the crust. You could crush up oreos and make individual servings in addition to the pie.
I bought the larger tub of cool whip, using half in the pie filling and saving some of it to top the pie with
then top that cool whip with peanut butter cup pieces
