Pork tenderloin ( Italian dressing )

pork tenderloin
Italian dressing

marinate tenderloin in dressing for 30 minutes or more
Grill until pork is cooked thru

sides: veggie, potato, roll

*this meal freezes well

Green bean casserole

2 cans green beans, we use the cut green beans
1 can cream of mushroom soup
salt and pepper to taste

mix all ingredients together, place in casserole dish
warm in oven at 350 for 30 minutes

Top with french onions, bake additional 5-10 minutes

Tator Tot casserole

1 pound hamburg, cooked and drained
1 can corn, drained
1 can cream of mushroom soup
Sliced cheese, American suggested
Tator Tots

Combine hamburg, corn and soup, mix well
Place in 9x9 baking dish
Layer with cheese, top with tator tots       

Bake covered at 350 degrees for 40 minutes
can uncover towards the end for added crisp

Swiss Chicken

recipe from Bev

 3-4 boneless skinless chicken breasts
swiss cheese slices to cover chicken
1 can cream of chicken soup
1 cup Pepperridge farm bread crumbs
½ stick oleo
bacon crumbs ( optional )

layer in dish: chicken, cheese, soup
melt oleo and mix with bread crumbs
layer over soup, sprinkle with bacon

heat in oven at 350 degrees, uncovered
30 minutes, or until chicken is cooked through

sides: potato, corn

* can precook the chicken, only needs to be heated through    
  when we use the meal
* can cut the chicken breast in half for smaller serving sizes
* this meal freezes well

Sausage chip dip

1 pound Italian sausage or 1 pound Zesty or Hot sausage, cooked
1 block cream cheese
1 can Ro Tel, diced tomatoes and green chiles, drained

mix all ingredients together and warm in the oven at 350 degrees
serve with taco chips or triscuit crackers

*warm the cream cheese in the oven while the meat his cooking, it then easily stirs into meat.
*if serving a double batch, use 1 pound Italian sausage and 1 pound zesty sausage

Taco Salad

Flour taco shells
taco meat
toppings of your choice

taco shell bowl:
using an oven safe bowl ( I used glass ) spray the bowl and both sides of the taco shell with cooking spray. Place over bowl, gently pressing down the shell. Place bowl on a cooking sheet. Bake in oven at 400 degrees for 10-15 minutes or until it’s golden brown and just crispy. Remove and set aside to cool.

heat taco meat

layer in taco shell bowl:
lettuce, meat, cheese, and toppings of your choice
add dressing of your choice. We use Thousand Island or Western.

Sides: fruit, taco chips & salsa

Chicken Monterey

recipe from Eric

boneless skinless chicken breasts
monterey jack cheese, slices

Marinade, mix together
½ cup olive oil
¼ cup red wine vinegar
¼ cup soy sauce
1 tsp minced garlic
½ tsp salt
½ tsp oregano
¼ tsp pepper
(good for 6 half chicken breasts )
marinade chicken for 30 minutes or more

Grill chicken. Just before removing from grill, layer on mushrooms, and top with cheese. Heat until melted.
