Chicken Monterey

recipe from Eric

boneless skinless chicken breasts
monterey jack cheese, slices

Marinade, mix together
½ cup olive oil
¼ cup red wine vinegar
¼ cup soy sauce
1 tsp minced garlic
½ tsp salt
½ tsp oregano
¼ tsp pepper
(good for 6 half chicken breasts )
marinade chicken for 30 minutes or more

Grill chicken. Just before removing from grill, layer on mushrooms, and top with cheese. Heat until melted.
