Chicken K-bobs

chicken, cut into large chunks
vegetables of your choice
Italian dressing
k-bob sticks

marinate chicken and vegetables in Italian dressing
push onto sticks
grill until chicken is cooked through

*if you're using wooden sticks, soak them in water before putting them on the grill

Italian Nachos

recipe from Eric


Italian sausage, cooked
Chicken, cooked and shredded
Taco chips
mozzarella cheese
Alfredo sauce
Jalepenos 

Layer the following on pan...
Taco chips 
sausage and chicken
mozzarella cheese
jalapenos
drizzle with Alfredo sauce

bake at 400 degrees until cheese is melted and just turning golden brown
no dipping sauce is needed

*Tips for Alfredo sauce. Mix in can well, the thick stuff is at the bottom. Because you won't use the whole jar, pour some in a bowl and warm just slightly in the microwave. Drizzle over nachos with a spoon.
*The chicken is optional, but we think it taste the best with both
*Jalapenos are also optional. I don't eat them, but I do like the flavor baked into the nachos
*can also add green pepper, or use that instead of jalapenos

Oreo Pudding

recipe from Lindsay


1 box vanilla pudding
1 box chocolate pudding
3 1/2 cups milk
whisk together for 2 minutes
mix in 2 tubs of cool whip
mix in package of Oreo cookies, crumbled

*This one is always a hit with the kids!




Noodle Salad

recipe from Tricia


box of noodles, cooked
mix in Italian dressing
mix in Parmessan cheese
you can also add green pepper

super simple and easy!

Ice Cream Dessert

recipe from my mom


I have 2 versions of this recipe; the proper way, and my way!

The proper version is from my mom:
2 cups crushed graham crackers, about 12-13 crackers
4 Tbsp peanut butter
6 full crunch bars, crushed
mix together with a fork

layer 2/3 of mixture into the bottom of a 9x13 Tupperware dish
layer a 1/2 gallon of vanilla ice cream
(open the whole container so the whole block of ice cream is exposed, cut thick slices with a large knife and lay into 9x13 dish.)
top with the remaining mixture and put into freezer

My version:
there are 3 packs of graham crackers in a box, crush up 1 pack
3-4 heaping spoonfuls of peanut butter
A full bag of the snack size crunch bars, crushed 
(I can never find the large crunch bars)
mix together with a fork

I serve it as a topping over individual scoops of ice cream. 
Even better if you let the ice cream melt just a touch and mix it up like a flurry.

Slow Cooked Pork Barbecue

recipe from Taste of Home


1 boneless pork loin roast (3-4 pounds), cut in half
1 1/2 tsp seasoned salt
1 tsp garlic powder
1 cup barbecue sauce
1 cup cola
8-10 sandwich rolls, split

Place roast in 5 quart slow cooker. 
Sprinkle with season salt and garlic powder
Cover and cook on low for 4 hours or until meat is tender
Remove meat, skim fat from cooking juices.
Shred meat with fork and return to slow cooker
Combine barbecue sauce and cola, pour over meat
Cover and cook on high for 1-2 hours or until sauce is thickened
serve on rolls

Pizza Bites

recipe from Six Sisters' Stuff, but I changed it up a bit


frozen bread dough rolls
pepperoni
mozzarella cheese
pizza toppings of your choice
pizza sauce for dipping

topping:
1 Tbsp butter or olive oil
2 Tbsp Parmesan cheese
1/2 tsp garlic powder
1 tsp dried Italian seasoning

Set out the number of rolls you will need and let rise, takes a few hours 
on a floured surface, roll out dough and then cut in half with knife
top with pepperoni and cheese
fold over edges and place seam side down in pan
brush with butter or olive oil
mix together Parmesan cheese, garlic and Italian season
sprinkle over pizza bites
bake uncovered at 400 degrees for 20 minutes or until golden brown


original recipe says to use the refrigerated pizza dough roll and then cut into squares. I like to use these frozen rolls because you can take out exactly what you need, you just need to plan ahead.



you can leave the rolls as one piece instead of cutting in half, 
we thought they turned out better when cut in half


6 rolls, cut in half, fits perfectly into a 9x9 pan
you can plan on 3-4 bites per person

Parmesan Potatoes

recipe from Vicki


6 large potatoes ( we use the larger red skinned )
1/4 cup Parmesan cheese
1/8 tsp pepper
1/4 cup flour
3/4 tsp salt
1/3 cup butter
chopped or dried parsley

Clean and cut potatoes into pieces
Combine flour, cheese, salt and pepper, in a bag
add potato pieces and shake
melt butter in 9x13 pan in oven
place potatoes in a layer in pan
bake at 375 for 1 hour turning once during baking time
sprinkle with parsley ( optional )

Banana Bread

recipe from my Grandma, Julia Koops


1 large banana, mashed
1 cup sugar
1 stick oleo
1 egg, add enough milk to make 1 cup liquid
1 1/2 cups flour
1 tsp baking soda
1 tsp vanilla
dash of salt

Cream the sugar and oleo 
Add the banana and egg mixture and beat
Add flour, soda, vanilla, and salt 

for a LOAF of bread, bake at 350 for 1 hour
for MUFFINS, bake at 350 for approx. 25 minutes (makes 12)
for MINI MUFFINS, bake at 350 for approx. 15-18 minutes (makes 36)

EGG-FREE muffin: we replace the egg with applesauce, 1/4 - 1/3 cup

Grady loves to help in the kitchen!




If you over mix, you loose the smooth top. Grady may have gotten carried away with the hand mixer!

Lydia's Crock Pot Chicken

4-6 boneless skinless chicken breasts
1 jar pasta sauce
4 carrots, sliced
4 cloves garlic, minced
1 medium onion, sliced
2 celery sticks, sliced
1/2 tsp salt

mix together and heat in crock pot, 6-8 hours on low
chicken should shred easily, serve over mashed potatoes, rice, or biscuits
(we serve it as a full chicken breast)



*this meal freezes well, and I take it right from the freezer to the crock pot
